  1. Set stovetop to medium heat and, in a medium-large saucepan, pour in a little EVOO and toss in the onions. 

  2. Put pie crust on the counter to bring to room temperature. *If it is store-bought, you can leave it in the package on the counter.

  3. After 3-5 minutes, add the ground beef to the pan and stir occasionally until meat is completely cooked.

  4. Turn on the oven to 420 degrees. Transfer the ground beef into a colander to strain the excess fat. Pour ground beef back into the pan.

  5. Add in the green beans, seasonings and tomato soup. Stir until thoroughly mixed.

  6. Remove pie crust from the packages. Carefully unroll the first pie crust and place in the bottom of a clear, glass pie dish.

  7. Transfer the meat mixture from the saucepan into the pie baking dish.

  8. Unroll the other pie crust and place over the top of the meat mixture, taking care to seal the edges. With a fork, prick the pie crust to create ventilation.

  9. Using the same fork (or a poultry brush), brush the top of the pie crust with the egg. Place the pie (uncovered) into the oven on the lowest rack, and bake for 25 minutes.
